കോട്ടയം സ്റ്റൈല് മീന് കറി കുടംപുളി ഇതുപോലെ ചെയ്തു ചേർക്കു ||Kottayam Fish Curry
Fish – 1 kg
Ginger – 1 big piece
Garlic – 12 big cloves
Green chillies – 7 small, or as per your taste
Garcinia cambogia – 3 big pieces, or as per your taste
Mustard seeds – 1 tbsp
Fenugreek seeds – ¼ tsp
Turmeric powder – ¾ tbsp
Chilly powder – 1 tbsp
Kashmiri chilly powder – 2-heaped tbsp.
Jaggery – 1 small piece
Salt today, we’re going to make Kottayam style fish curry we’ll use Garcinia cambogia / kudam puli wash the kudam puli well and soak in water, if time allows.. I have taken 3 glasses of water to soak the kudam puli and 3 big pieces of kudam puli like so, for 1 kg of fish boil this water really well until it reduces down to 2 1/2 glasses of water 1kg fish (before cleaning) of your choice.. I have used Seer fish we won’t be using shallots and onions in this curry, as the chances of it going bad is too high.. 12 big cloves of garlic, chopped 1 big piece of ginger, thinly chopped curry leaves 2 types of chilly powder, one is less spicy and gives more colour to the curry preferably use coconut oil mustard seeds and fenugreek seeds for seasoning boil the kudam puli water really well until it reduces down to 2 1/2 glasses of water heat an earthen pot and add coconut oil Add 1 tsp mustard seeds and splutter Add 1/4 tsp fenugreek seeds lower the flame so that it doesn’t burn Add ginger, garlic and curry leaves fry well until golden Add 3/4 tbsp turmeric powder and sauté until the raw smell goes away keep the flame low Add 1 tbsp red chilly powder (spicier one) and 2 heaped tbsp of kashmiri red chilly powder (not so spicy) and sauté until the raw smell goes away keep the flame low add kudam puli water to this and turn the flame to high When we boil the kudam puli first and use that water, all the juices from it will be there in the water, hence the fish can easily absorb it all close the lid and let it boil Add fish I had already marinated the fish with salt, so i’m not adding more salt.. You can add salt to the curry while adding the water close with a lid and cook taste and add more salt if required add curry leaves.. add more if available I had cooked the curry for 7 more mins,with lid closed after it started boiling.. the gravy has turned thick and nice.. lower the flame and close the lid for 3 more minutes. add a small piece of jaggery (optional) lower the flame and close the lid for 3 more minutes. fish curry is now ready to be served!! add more curry leaves, if available and turn off the flame..
