Here all of us are fine. Todays video is a semolina fish fry. Its a Manglore special dish. Many had requested me to show this. For that I have taken 600g of fish. I havent taken the head of it. The rest would be around 550-600g. I am using Pomfret here. You can use any fish you like. I washed it well. Rubbed some salt and vinegar over it and kept it for 10mts and washed it again. Now lets keep this aside. Now we need tamarind pulp from a gooseberry size taramarind soaked for a while. Tamarind pulp is what is used traditionally. If you dont like it, you can use lemon juice or vinegar. I am using tamarind pulp here today. Add 4 green chillies cut to small pieces into a mixi jar. You can adjust the number of chillies according to the spice of it. Add a small piece of ginger too. 4 medium garlic cloves, little curry leaves can be torn with our fingers itself. Next add 1/4tsp fennel seeds. This is optional but it gives a special taste and flavour to the fish fry. Add 1/4tsp turmeric powder, 1/2tsp pepper powder. You can use pepper corns too. To get a good colour I am using 2tbsp Kashmiri chilli powder and 1/2tbsp chilli powder Now add salt as needed and 1.5tbsp tamarind pulp. Shall grind all these and then taste and see. Add some water to grind this to a fine paste. Now its grinded well. Let me taste and see. Shall add little more salt and tamarind pulp. Adding 1/2tbsp tamarind pulp. Always taste and adjust Adding little more salt. Mix all these well. Lastly add 1tsp coconut oil. This gives the masala a special taste Mix all these well. Now its perfect. Salt should always stand a pinch on the higher side. Only then it will absorb well into the fish. Add the masala to the fish pieces. Dont add the whole masala together Marinate and see. Add more if needed. You can store the rest in the fridge and use later If you are using big fishes, dont forget to slit the fishes. Only then the masala will be absorbed inside well. Never fry the fish as soon as you marinate the fish. Now lets chill this for 30mts or keep it outside. After 30mts of marination, take some semolina in a plate. Dip the fishe pieces into it. Coat the whole fish with this semolina. Just a coat will do. Lets coat all the fishes in this semolina and then fry it. Heat a pan to fry the fish. Add coconut oil or any oil you have. You can deep fry or shallow fry it. I am shallow frying it with little oil. The oil shouldnt become very hot. Since the fish is coated with semolina, it will take time to get cooked inside the fish. So reduce the flame and then cook both the sides well. Later we shall make it crunchy on medium flame. The oil is slightly hot. Dust the over semolina from the fish and then place it into the oil. Then the excess semolina goes off. I am fryingt the small pieces first. Lets close and cook both the sides Now lets turn it over and cook the other side. Later we shall make it crispy. Close it and cook the other side too. Later we shall increase the flame to medium and make it crispy. This will take more time than the normal fish fry. Thats because its the semolina coated fish fry. The cooking time will vary according to the fish, size and flesh. So taste one piece from the first batch and see. When you cut it also you can understand. Now I have changed the flame to medium. Lets crispen both sides Our semolina fish fry is ready now. Transfer the fish to a tissue paper or strainer. Lets fry the next batch now. Dont forget to reduce the flame. Close and cook it like before. Now the second batch is also ready. Its done. I shall take photos and come. Now our easy and tasty semolina fish fry is ready. I have taken photos and come. Since I dont eat fish, I cant taste and show you.
