We use 200g. of pork belly. Add pepper 1/2 tsp. Let it sit at room temperature 20-30 minutes. Add the flour 4 Tbsp all over the pork. Add the cold water 4 Tbsp all over the pork. The flour and water is same quantity. Then mix all together and flour all over to coat both sides of the pork. Don’t forget to clean your hand before ^_^ It is ready for fried the pork. Heat the oil in a frying pan or wok over medium heat. Carefully add in the pork belly fry for 5-8 mins over medium heat, until deep golden brown. One side is about 3 minutes and check again. It is deep golden brown. It should be very soft on the inside and crispy on the outside. Remove the pork from the hot oil. Remove and drain on paper towel for 5 minutes before slicing into bite size pieces. The sauce are mixed of fish sauce, rice powder, chill, lemon juice. It very soft on the inside and crispy on the outside. This is thin pork slice and will be very crispy on the outside. Very crispy and it is good match with sticky rice.
