Meaghan: WELCOME BACK. THE SOLE IS COOKING NICELY. THROW THE AVOCADO INTO THE BLENDER. DON’T WORRY. BECAUSE OF THE SMALL, DELICATE NATURE-OF-THE FISH, SEE HOW IT FLAKES. WE WANT THAT. WE’RE MAKING TACOS. WE WILL NOT PUT THIS DIRECTEDLY ON THE PLATE. WE WANT THE MAKE TACOS. SO LET THAT START TO FLAKE. LET IT KEEP COOKING. SO AS THAT CONTINUES TO COOK. WHAT WE’RE LOOKING FOR IS A NICE, OPAQUE COLOR SOME IF YOU CAN SEE HOW WE’RE STARTING TO GET THAT GOOD OPAQUE COLOR, WHICH OPAQUE IS LIKE THE PEARLY WHITE. ONCE WE GET THAT COLOR AND THE FLESH IS FIRM, THEN WE’LL BE PRETTY GOOD TO GO. Meaghan: OKAY. SO AVOCADO, SOUR CREAM. A LITTLE BIT OF LIME JUICE IN THERE. BEAUTIFUL. AND THEN WE’RE JUST GOING TO PULSE THAT UNTIL IT’S A GOOD CREAMY CONSISTENCY. OKAY. SO WE’VE GOT THE THREE COMPONENTS HERE. OUR SOLE IS DOING REALLY WELL. YOU’RE GOING TO PULSE UP THIS BEAUTIFUL — Meaghan: ADMIT TO EVERYBODY THAT I WASN’T JUST BEING A WEAKLING. IT WAS LESS — THE AVOCADO IS TOUGH. EVEN THE BLENDER IS HAVING A BIT OF A HARD TIME, BUT THAT’S NOT A PROBLEM AT ALL. WE’LL PUREE THAT UNTIL THAT IS SMOOTH. THAT’S GOING TO BE OUR AVOCADO LIME CREME THAT’S GOING TO GO ON OUR TACOS. WE HAVE OUR FLOUR AND CORN MIXTURE TORTILLAS HERE. Meaghan: THOSE ARE GOOD. THOSE ARE AMAZING. THOSE ARE A FLOUR AND CORN PICTURE. Meaghan: IT’S GOING NOW. BEAUTIFUL. ALL WE WANT TO DO IS JUST HEAT THOSE THROUGH. THIS IS GOING TO FINISH. WHEN YOU FINISH THAT, WE’LL BE READY TO PLATE. Meaghan: THIS IS FAST. Andy: SIMPLE, RIGHT? HOW QUICK WAS THAT WE DID EVERYTHING FROM SCRATCH RIGHT HERE. MINUS FAST FORWARD THAT WE DID ON THE MARINATING OF THE FISH. Meaghan: BUT YOU REALLY COULD DO THIS WITHOUT EVEN DOING PREP WORK. Meaghan: ABSOLUTELY. YOU CAN ACTUALLY MARINATE, BECAUSE THIS FISH IS SO DELICATE. YOU CAN MARINATE IT FOR FIVE MINUTES AND STILL GET THE FULL EFFECT OF THE FLAVOR. Meaghan: OKAY.
