Crispy WHOLE Fried Fish in Red and Green Thai Curry Sauce, Blood Purple Rice, Cooking ASMR (no talk)
Hi, Welcome to my channel Today, I will show you how I make deep fried whole fish with a thai curry sauce Enjoy & Happy Cooking Slicing cayenne peppers at an angle I like to slice at an angle because it is better presentation & will provide more flavor into the sauce If you don’t like spicy, feel free to add bell peppers instead These are freshly picked because I grow them in my garden. I used cayenne peppers because they’re milder than Thai Birds Eye Chili Peppers Whole Fish (this is a white bass) Pat dry with paper towels Score both sides of the fish for more even cooking tempura flour all over the fish flour both sides of fish Use any kind of oil for frying Add fish once oil is hottttt Frying tail of fish because my pan isn’t big enough Once fish is crispy to a golden brown then remove from oil and place onto a paper towel to remove excess oil Coconut milk Once it begins to simmer, add curry paste(s) I used red curry and green curry Mix well Allow to simmer until oil starts to separate and float to the top Add lemongrass, torn up lime leaves and galangal You can see oil has really started to separate here Add some water to dilute and prevent sauce to be too salty Allow simmer till sauce begins to just thicken up a little bit again (I’ve already turned off heat to keep pepper fresh)
Add cayenne peppers (or any vegetables of choice) Add thai basil after heat is turned off so they will only wilt instead of overcook Pour the goodness all over the fish!
Served with blood sticky rice & fresh sliced tomatoes Ball up the sticky rice, rip a piece of fish and yum yum yum.
