Easy salmon with Thai style salad


Place lime juice, soy sauce, sugar, chilli – if using – ginger and garlic in a small bowl. Stir until the sugar
is dissolved. Heat a barbecue grill
or char grill on medium-high. Cook for 2-3 minutes
each side or until cooked to your liking. Set aside for five minutes
to rest. Combine cucumber, tomato… ..onion, cashew… ..mint and coriander in a large bowl. Mix well. Drizzle with two tablespoons
of the sauce mixture and toss to combine. Divide among serving plates. Top with salmon. Drizzle with remaining
sauce mixture. Couldn’t be easier
or more delicious.
