Fish Tacos by Monterey Bay Aquarium Chef Matt Beaudin
How’s it going guys, my name is Matt Beaudin. I’m the Executive Chef here at the Monterey Bay Aquarium. Today we’re going to be showing you how to cook some delicious sustainable seafood. We actually have some rock cod right here from Monterey Bay. We’re going to make some rock cod tacos. Alright, the first thing you want to do guys, is find your fish. You want to make sure you’re buying your fish from a responsible source. You can find those sources on the Seafood Watch app that you can download to your phone Alright. So you want to pour the oil in and then wait. It’s going to be about a minute to a minute and a half you’ll start to see little ripples on the top and just a little bit of smoke coming up off Then you’ll know the oil is hot enough so your fish isn’t going to stick to the pan.
