Ginger and Scallion Fish, why is fish a must-have for Chinese New Year 姜葱鱼片


hi everyone I’m very excited that
Chinese new New Year is coming yay are you excited of course it’s the time I miss
my family in China even more At my family’s New Year’s Eve dinner fish is
always a must-have why fish? fish in Chinese Yû it means an abundant and
it means more like more happiness more good luck and red is good color for
Chinese especially for Chinese New Year and I have a bunch of fish recipes on
my channel for whole fish, fish fillet you can check out today I am gonna make
ginger and the scallion fish and it’s so delicious very simple to make let me
show you the ingredients now we have the trio like I said we always need these
three things to make fish sliced ginger slices of scallions and some garlic of
course we’re gonna highlight ginger and scallion for this dish and I have one
fish fillet basa fish so first we’re going to slice it so we’re gonna slice
like this not too thin of course the tail part very thin like this so this way they’re not going to fall
apart when we cook now I’m going to season the fish so to season the fish add
some salt white pepper powder and about 1 teaspoon shaoxing cook wine and a few
slices of ginger and the white part of scallion and about 1 teaspoon starch we
just mix this together now we’ll let this sit for a few minutes before we
cook it first we heat up the pan to high add some
vegetable oil we are going to sauté ginger and scallion the white part and some garlic and the green Sichuan peppercorns so
this one even more florally than the red one more (numb)
trust me you just need a little bit we sauté till it’s aromatic then we add chicken stock just over
1/2 cup if you don’t have chicken stock you can use water and bring this to boil
now it’s boiling we add the fish piece by piece push it gently so we will let it cook about three minutes almost three minutes and fish almost done
add remaining green onions scallions and some white pepper powder push gently let’s just have a quick taste Wow perfect
because the chicken stock has salt so we don’t even need to adjust and last we
just need a little bit of slurry to thicken it so we coat the fish evenly simple like that our ginger and scallion fish is ready let’s try it shall we? is it simple to make it so if you’ll
make for the family you just double or triple the portion let’s try the fish mm-hmm
it is so tender and seasoned perfectly I taste the great flavor of ginger and
scallion and the Sichuan peppercorns the green Sichuan peppercorns just enough
numbness hmm please please try to make this for Chinese New Year so you will
have a year of the abundance and more happiness more luck if you like this

  8. I’ve being cooking Chinese food for years and have recently discovered this channel. These recipes are beautifully simple tasty and healthy to.
    Last night. I Cooked my wife and daughter this dish with a spinach & garlic dish, a lettuce in oyster sauce plus some egg fried rice. All so simple to make and they said it was some of the best food they ever tasted. all together adding up to a tiny amount of calories for a big tasty feast.
