Healthy Keto, dairy-free, lectins-free “fish with cauliflower and pumpkin puree” (recipe)


I’ve presented the recipe for this puree a
few months ago. But back then I was eating goat butter. Now, because this year I wish to stay away
from dairy products as well, I made this puree with the pumpkin instead of butter because
it turns out that pumpkin has fewer carbohydrates than cauliflower does. That orange, long pumpkin, that’s the one
I’m talking about. And in this mixture it is amazing. Yes, it has an amazing taste. Very close to the one with butter, but I like
it. I don’t feel the need to use butter. And I eat this with fish. I don’t like to eat fish alone, without puree. Because I eat them combined, I’m presenting
both recipes. These two were made to be eaten together. In a pan I placed leeks (over here) and fennel
(over here). I’ve turned on the fire. And I’ve added sauerkraut or sour cabbage
(it looks like this). There’s also oil in the pan. I’m adding water and allowing it to boil. I’m also adding chili pepper. You could use cayenne pepper, that one is
better. I’m adding some spices. Oops… I’ll have to grind more and add them in there. I mix it and then I put the lid on and let
it boil slowly. The herb mixture is made of rosemary, thyme,
sage, basil and mint. That’s about it. Use any kind of leaf that you can find, but
no seeds. I also have pumpkin and cauliflower in here. I’ve added the cauliflower and pumpkin. I mix it to make sure it doesn’t burn and
I’m adding more water. I cover it and let it boil. I check to see if the cauliflower and the
pumpkin are done by pressing on them. When it’s soft, that means it’s cooked. If it’s not soft enough, it’s not good. But in this case it is soft, so that means
it’s cooked. This is the texture you’re looking for. So I’ve stopped the fire and this is done. I’ll place these veggies in here and now I’ll
turn them into a puree with this device. Puree is done. It tastes perfect and I will eat this with
fish. Here I will prepare the fish. In an oven tray I’ve placed a baking paper,
some oil and thyme. And this is the fish. This one is trout. Make sure you buy it fillet, otherwise you’ll
have to cut it yourself. And this one is, I forgot its name. And here I kept the fish with salt. I let it sit in salt to become a little bit
salty and to make sure I will not find pieces of salt while eating the fish. And then you spray the fish with olive oil
on top. And then add more herbs. I’ve added herbs at the bottom and then I’m
adding herbs on the top; to make sure it has herbs everywhere. Then you add some lemon. Lemon juice gives fish a better taste. Make sure you add quite a bit of lemon juice. I’ve added two lemons. It’s important to preheat the oven. Then place the fish inside and cook it for
about 20 minutes. The 20 minutes are up. This is the fish. Now you turn it, you flip it on the other
side to cook evenly. Now all the fish is flipped and you put it
back into the oven for another 20 minutes. Seven minutes later. This is what it looks like. And now I will flip it again. It’s flipped again. And back into the oven four another 4 minutes. The 4 minutes are up. Fish is done and this is what it should look

with different leaves that I can find. I found parsley fresh enough. I think it was cut two days ago, or so. The only living thing that I have and I recommend
everyone do eat, are sunflower sprouts. I grow sunflower sprouts indoor, in the balcony. And I’ve just cut this few minutes ago. Therefore this is the only living food that
I can eat during winter. It is amazing. My body recognizes it’s good for it. I love this. I can also eat leeks. I prefer to eat leeks instead of green onion
or green garlic. Because green onion is actually stronger,
it’s too strong for the body. Both onion and garlic diminish your energy. Leek doesn’t diminish your energy because
it’s not that strong. So there are moments when you have to use
garlic or onion. But you have to use it as a medicine, just
like you take a pill. You take small quantities when you need it. But leaks, you can eat it as a food because
it’s not that strong. So I can eat leeks. I can eat parsley because I found it fresh. Most of all I eat green sunflower sprouts. These are the only living foods that I have
access to. (Fruits, veggies and leafs) Everything produces
histamines after you cut it. In two days all veggies have enough histamine
to be considered dead. And it affects your body just the same way
meat affects you. Meat is bad for you because it’s dead. You know the theory that says “if you boil
water it is dead water”? There’s living water and dead water. The same thing happens with food. In food we actually consume water. If meat is dead, we consume dead water. If a plant is dead, it has dead water. But water becomes stagnant and dead after
2 days. Therefore this sunflower sprout is the only
one that still has living water. This is the only one that can give me a living
energy. This is dead energy. But I’m eating it because it tastes good,
or because it has proteins and minerals, or maybe because I don’t have enough sunflower
sprouts. So what I’m saying is “eat more sunflower
sprouts, or alfalfa, or whatever you can find that’s been cut a few minutes ago”. Eat things that you can grow indoors, that
you can cut yourself and eat them. Eat things that you know they are fresh. For example avocado, as you can see it is
extremely old. It’s been taken out of a tree about a month
ago, I imagine. Avocado doesn’t grow in my country. Therefore I think it’s been dead for about
a month or maybe two. Who knows? Avocado is full of histamines. But I consume it because people say it has
fibers. And it’s supposed to help you poop. I’m not a big fan of Avocado. Sunflower sprouts are what I recommend. In my opinion food is probably just an excuse. Food is the reason for us to eat more sunflower
sprouts. Or at least it is for me. Because this is the only living thing that
I have access to, that I can eat. I’m presenting you this recipe again because
I have to stay away from dairy products, legumes, seeds, nuts, cereals. I have to stay away from fruits because they’re
full of fructose and sugar. And I’m trying to stay away from dead plants
and plants that have lots of toxins. For example I stay away from tomatoes because
people use lots of chemicals in tomatoes. I stay away from cucumber because I’ve noticed
cucumbers are huge. They are supposed to be this little. I have some pickled cucumbers that are this
size. Those cucumbers I can eat them. But the giant cucumbers I cannot eat them. Those are full of toxins. So for one year, my options are very limited. And that’s why I will present a few dishes
that I’m eating. I don’t have that many options. In case you wish to do the same experiment
