How to Make Battered Cod Fish Tacos with Jalapeno Crema

Today on The Stay At Home Chef I’m showing you how to make Battered Cod Fish Tacos Fish tacos are something my whole family loves, even the kids. It’s one of our favorite dinners. We’re going to start making our battered cod tacos today by heating up some oil in our frying pan. I’m going to pour in enough vegetable oil to cover the pan with about 1/2 inch to 1 inch of the oil. And then get it heating to 350 degrees F. While the oil is heating up we can prepare all of the toppings for our taco. First up is a Jalapeno Crema that I’m going to make right here in my food processor. Put in 1 cup of fresh cilantro 2 jalapenos Half of a white onion and 1 cup of heavy cream 1 teaspoon of salt and 2 tablespoons of sour cream Put the lid on and blend this until it’s smooth. Alright, I’m going to pour this into a squeeze bottle for easy serving so you can just drizzle it right over the taco. Gotta be careful to not spill over here. You can also use a funnel to make it a little bit easier and cleaner. Next we’ll put together a quick fresh avocado salsa. I have 4 roma tomatoes that I’ve diced up here in this bowl. And then we’re going to add in 1/2 of a white onion that I’ve minced up some fresh cilantro a diced avocado 1/2 teaspoon salt and the juice from 2 limes Give this a quick stir. Alright, set this aside and then we’re going to move on to our last topping which is is shredded cabbage. We’ll need 2 cups of shredded cabbage and you can buy that already shredded in a bag. They usually label it as coleslaw, but you don’t want the kind with slivers of carrots in it. And then just pour over 2 tablespoons of red wine vinegar and season it generously with salt and pepper And toss it together. This quick little slaw is one of my favorite parts of the taco. Alright, we are ready to make up that batter to fry our fish. I have 1 cup of flour in my bowl and I’m going to add in… 1 teaspoon each of ground mustard, onion powder, garlic powder, and crushed red pepper flakes. then 1 teaspoon of baking powder, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Give this a quick whisk to combine it. And then pour in 1 cup of….I’m using rootbeer, but you can also use real beer, or your favorite soda like Dr. Pepper. Just whisk this until it’s smooth. Alright, now we can get our fish cut up and ready to dip in the batter and pop in the frying pan. I have this piece of cod that happens to be the width of a tortilla and that’s what you want to look for. Then you’ll slice it so you get little pieces like this that will fit right onto your taco. Bring it all right over next to your frying pan so you can easily dip it into the batter and place it directly into the pan. Take a piece of fish and dip it in the batter so that it’s covered. And then place it directly into the hot oil. It will need to cook for about 4 minutes before flipping. It should be a nice deep brown on both sides. Once they are done transfer them to a paper-towel lined plate to drain. And then let’s put together our tacos. Put on our piece of fish. A little of the slaw. A little salsa. And that jalapeno crema.
