  10. Please note that the dum cooking of the Biryani will take a total of 45 mins i.e., 10 mins on high heat followed by 35 mins on low heat. This is shown here 4:25 in the video (10 mins + 35 mins) and clearly explained in the process mentioned in the description box. Because of the use of raw papaya paste as meat tenderizer and marination with curd/yoghurt for 3 hours the meat will get cooked in 45 mins.

  11. What if I don’t have the papaya, should I cook the mutton for few minutes and then do the dum process ? Or simply marinating it longer (4-5 hours) would suffice( if I don’t have raw papaya) ?

    Lovely recipe.
    The key is the raw papaya yoghurt mix. Ideally it should be marinated overnight! My friend Mason's mom- Shagufta aunty used to do that!
