Shrimp Tacos with Pineapple Mango Salsa


Hello, everyone! I’m so happy to welcome you to my new studio kitchen, this was designed by my brother who is an architect. He made sure that my new place fits my personality simple but very
functional. He made a customized wall rack that I
really really like because I have easy access to some of my mugs collection. I love drinking coffee and tea so I use different mugs every day depending on my mood. You can put your herbs, spices and
condiments there as well decorate it with fresh or artificial flowers and plants. I have my wall of herbs here that I did myself. Now, my most favorite part about
this design is that, the kitchen is connected straight to the dining table. I find this very entertaining because my family and my friends can watch me while I prepare and cook the dishes for them. Let’s begin cooking. Since it’s summertime already, let’s prepare a dish that is light, refreshing and of course
we’re going to use fresh fruits and vegetables to make it more colorful. Shrimp Tacos with Pineapple Mango Salsa Start with our salsa use fresh pineapple Get a thin and very sharp knife. Start slicing around the edge of the
pineapple. You slice as close to the hard center and avoid cutting through
the skin. Make cuts across the middle too. Scrape the bottom with a spoon. Now for the hard center, slice the bottom on both sides. It will be easier to scrape
the bottom of the pineapple. Same procedure with the other half. The pineapple is really sweet! Pour the
remaining juice. Now, you have a presentation bowl for your salsa. Cut the pineapple into medium dice. Put the pineapples back into the bowl. Let’s set this aside. Next is mango. Slide it all the way. Cut the mango into medium dice. Add the mangoes to the bowl. red onion Cut it into small
dice. Add the onions to the bowl. Tomato, cut it into small dice. This will go to the bowl as well. Let’s cut some lime. Squeeze some
lime juice all over the salsa about two tablespoons. Add the chopped cilantro. Mix them well. Season the salsa with salt it’s going to balance the sweetness and tangy flavor of the pineapple mango salsa. Mix it again. Let’s start cooking the shrimps. Using a frying pan, turn on the heat to
medium. Add the oil. Add the garlic. Sauté it until it’s starting to color. Add the shrimps some cumin paprika chili powder and cayenne pepper. If you don’t want your shrimp tacos spicy you can remove the cayenne pepper. season it with salt ground black pepper Cook the shrimps until tender. Transfer the shrimps to a plate. Time to heat the tortillas, if you don’t have griddle you can heat them in the oven toaster. Turn on to high heat. Add some oil, just a little. Make sure the griddle is
really really hot. Heat the tortillas just for few seconds. I have 8 tortillas here. This recipe is good for 8 people. Now it’s time to assemble our
shrimp tacos. Transfer the pineapple mango into the pineapple bowl. This is a
very nice presentation! Let’s assemble our shrimp tacos. shredded iceberg lettuce Serve it with sour cream. That’s it! Our Shrimp Tacos with

  2. Nice recipe, but I shouldn't recommend to serve the pineapple core like that. It's quite hard and tough compared to the rest of the flesh. It's great for broths or purees though.
