Simple Tray Baked Salmon | Bart’s Fish Tales

Hi I’m Bart of Bart’s Fish Tales and today I’m going to cook for Family Food Tube. This is Juul my lovely daughter, she is 1 1/2 years old and today we’re going to make this delicious recipe of Jamie Oliver’s which is oven tray baked Salmon with new potatoes and seasonal veggies. This dish is light, it’s nutritious and the potatoes and the beans give a bit of sweetness to the dish. We have the herbs, we have the lemon which gives a kick and freshness with it. We of course have the salmon, crunchy, crispy on the outside, juicy and tender from the inside. So for this dish guys I’m using salmon, and why is because it’s a really oily fish it has a lot of omega 3 and this is really good for your kids and if you buy seafood, if you buy salmon, make sure you buy them coming from a sustainable source. First heat your oven on 230 degrees celcius or 450 Fahrenheit So let’s kick off we’re going to make a serving of 4 today. Ok so first thing, we take a big pan and fill it up with some cold water, and bring it to boil. with some salt and the first job is to clean the potatoes we have here some water. Then we are going to clean them with a brush on the outside so what I use is 700g of new potatoes we leave the skin on. Ok so potatoes in. So we have 3 types of beans today, we have the green beans, we have the runner beans and yellow french beans so the frist shop I’m doing is getting rid of the tips. So we start with the runner beans So I cut off the tops of the runner beans, I cut in to the side of the bean. You try to get rid of this vein on the outside. If it’s really fresh it will be difficult to find it so the better the beans the less vein you will find so I use for this dish I have 100g first I start with the runner beans, slice them around every 4cm cut them in these bite size pieces we are boiling the potatoes right now. So what you do is get them 10-12 minutes until they’re nearly done. And as soon as they’re nearly done, we’re going to add the veggies. including the potatoes will be ready at the same time. Ok as soon as all the veggies have been properly cooked we drain them in to a colander. So next you just add all these gently boiled veggies in to an oven tray and scatter over the peas. So add some butter, use like 20g of butter 1 tablespoon of olive oil drizzle it over all the beautiful ingredients So next step, we’ve got 2 lemons, the zest of 2 lemons. scatter this in the tray next step is the lemon, so what we use is the lemon juice and use your fingers to catch the pips. So what I also do is use a bit of the lemon juice to drizzle over the salmon. so now I give it a toss with my hand, it’s important all the ingredients are still warm so all the flavours are getting properly infused. So next step I take a handful of basil. And I get rid of the stalks, I just take the leaves. so basil, dill fresh dill, half of the basil, half of the fresh dill and add it to the tray. So now here with the salmon we’re going to score the filet lightly in to the skin bit of olive oil so now I use the other half of the fresh herbs to fill the scores. Now we add the salmon on top of the tray. so beautiful so now it’s time to put it in the oven I’m going to bake this for 10-15 minutes depending on the thickness of the fillet of your fish. Make sure skin is crispy and salmon is properly cooked. and the veggies are soft So I’m now taking out the salmon, that’s been cooked 12 minutes. see with wild salmon, the protein is releasing a bit quicker than with farmed salmon which is perfectly ok so don’t worry about that. This is it, it’s so beautiful, it smells perfect. And if your child is younger than you, you could mash it up for your family. all the ingredients are soft and tender so it’s really easy to give it a bit of a mash. But we’re going to taste it.
