Smoked Salmon and Spinach Salad with Lemon Herb Dressing


Today we’re gonna be making such a beautiful salad that´s very very easy to make and it truly has such an incredible flavor a Smoked Salmon Salad with Spinach and Goat Cheese guys this salad has so many different textures and flavors to it plus it´s very healthy and it´s done within minutes you know my motto´s always been if you have a salad a day you keep the doctor away and with salads like this you gotta get excited ok let´s get started before we get started I´d like to encourage you to become a Patreon of Spain on a Fork guys come join me in this amazing cooking adventure I´ve set up some great rewards for you guys you´ll find the link in the descripiton box below we´re gonna begin by grabbing 2 cups of tightly packed spinach as you guys know I love to use bagged spinach because it´s pre-cut, pre-washed and it´s inexpensive now transfer the spinach onto a cutting board just bunch it together with your hands and start chopping it we´re not looking for a fine chop just a rough chop and then add the spinach into a shallow bowl next cut a red onion in half I´m only gonna be using half of the onion for this recipe I always like to remove at least one of the top layers and then you wanna finely dice it and then add the onions on top the spinach now grab 3 jarred roasted red bell peppers pat them down with some paper towels and start cutting them into small pieces and add the roasted peppers on top of the spinach now I´m gonna grab about 6 black olives that have been pitted and start thinly slicing them and add the slices of black olives on top of the spinach for the next ingredient we´ve got the star of the dish smoked salmon I´m gonna be using about 3 slices for this recipe just roll each slice up cut it right down the middle and start chopping it and then add the chopped smoked salmon on top of the spinach for the final ingredient I´ve got some goat cheese here this is the soft kind not the hard kind I´m gonna grab a medallion and cut it in half and then start crumbling the cheese on top of the salad then season everything with sea salt you don´t want to put too much as the smoked salmon already has a saltiness to it some freshly cracked black pepper and I´m gonna garnish it with a slice of fresh lemon ok guys our salad is done this looks amazing you could easily just put some extra virgin olive oil on top and it´s ready to go but I´ve came up with a very simple dressing that really brings all these flavors together begin by adding 2 tablespoons of extra virgin Spanish olive oil into a bowl along with 1/2 a tablespoon of fresh lemon juice you know the easiest way to get that juice to come out of a fresh lemon is just make sure you roll it before you cut it then add a 1/4 teaspoon of dried dill a 1/4 teaspoon of dried parsley a kiss of sea salt and start whisking everything together until it´s well combined and then drizzle the dressing on top of the salad ok now I´m gonna get in there and give this a try! here we go…Salud! such an amazing balance to this salad all the ingredients work so well together so many different layers of flavors and that simple herb dressing I´m telling you it just brings everything together it´s a marriage made in heaven perfect salad for the summer time you don´t have to turn on the stove top you don´t have to turn on the oven it´s refreshing it´s healthy guys if you enjoyed today´s video please hit that like button leave me a comment below and don´t forget to subscribe 🙂 until the next time…Hasta Luego!!
