Stuffed Spanish Peppers with Tuna and Tomatoes

Bienvenidos welcome to Spain on a fork in today’s episode we’re gonna make the most incredible and I truly mean incredible Spanish Stuffed peppers with tuna and tomatoes this is the next level in stuffed peppers loaded with so many flavors easy to make and done in under 30 minutes plus they’re naturally gluten free and low carb the perfect dish for any occasion now to make this recipe I do recommend you use fresh peppers that are similar in size this is just for the presentation of the dish a mild queso Manchego you know if you can’t get queso Manchego in your area that’s ok you can use any type of cheese that you like but I do recommend the queso Manchego it has such a great flavor to it and of course some good quality Spanish paprika as always I’m gonna be using Kiva’s sweet smoked Spanish paprika I love this paprika it has the perfect balance of sweetness and smokiness link in the description box below where you can get this alright folks let’s get started the first thing we’re gonna do is grab 3 small bell peppers and rinse them under cold running water I’ve got a yellow one, a green one and a red one then pat each one dry with a dish cloth and cut each bell pepper in half lengthwise now get in there with a pairing knife cut off the seeds and remove any of the white piths once you have all your bell peppers cut add them into a baking tray lined with foil paper cut side up and season them with sea salt and freshly cracked black pepper ok now we’re moving on to the filling grab one 15 oz can of diced tomatoes or crushed tomatoes and add them to a sieve with a bowl underneath and get in there with a spoon and move it around just to get rid of any excess liquid and add the drained tomatoes into a large bowl next grab 2 cans of tuna of course I´m using Spanish tuna this is some high quality stuff add the tuna to the sieve with the bowl underneath and mix it around to remove any of that excess oil and add the tuna to the bowl with the diced tomatoes now grab 2 large organic eggs and crack them into a bowl beat the eggs until they´re well beaten and add the eggs to the bowl with the tuna & tomatoes now we´re gonna add 1 tbsp of parsley flakes 1/2 a tsp of smoked Spanish paprika season with sea salt and a generous portion of freshly cracked black pepper and mix it all together until it´s well combined now we´re gonna evenly divide the mixture into the bell peppers for the final step I´m gonna grab a block of Spanish Manchego cheese again you can use whatever type of cheese that you like and I´m gonna finely shred it on top of each pepper make sure you shred in a generous amount top off each pepper with a little smoked paprika and add the baking tray to a preheated oven bake and broil option 250 C – 480 F after 20 minutes remove the peppers from the oven and look how beautiful this looks I´m gonna grab a couple of peppers and add them to a plate for presentation and sprinkle them with some freshly chopped parsley ok guys our stuffed peppers are done it smells so amazing in the kitchen let´s cut one of them open see what it looks like inside and give it a try ok guys here we go I´m telling you it is such a beautiful combination of flavors everything works so well together that smoked paprika really shines through everything is perfecty cooked including the bell peppers they´re not over cooked so they have a beautiful texture to them to hold everything together if you enjoyed today´s video hit that like button leave me a comment below and if you´re not subscribed smash that subscribe button until the next time…Hasta Luego!!

  9. Love your cooking, Albert. Manchego cheese is easily available here in Missouri and a staple in our refrigerator. I grew up with watery stuffed bell peppers, always over-filled with mushy rice, and some beef / chicken. I hated them for decades until I met my wife. She and you know how to make a proper stuffed pepper! Delicious! Thanks for sharing!
