Yellow Fin Tuna and Mango Ceviche
Hey guys it is NOT Chef Ryan I’m back with another video. Today I’m going to show you how to make a yellow fin tuna and mango ceviche right out of your kitchen. Let’s get in to the kitchen. He’s a little overweight and he likes to eat, but he’s not a chef, that’s why he’s Not Chef Ryan! So as you can see here we’ve got an absolutely beautiful cut of yellow fin tuna. What we’re going to do is we’re going to start by cutting this in little squares. You’ll want to cut away from the grain. Guys, when you do this make sure that you use an extremely sharp knife, otherwise it becomes very difficult to cut. So we’ll cut this long ways, and then what you’ll do is and then what you’ll do is is you’ll take each piece and cut them in to strips like this Then you’ll cut them in to little squares just like that. So once you’ve got all of your tuna cubed we’re going to set this in to a mixing bowl just like this. Then, we’re going to add half of a lemon; the juice from half of a lemon. Then the juice from one lime and a little bit of peanut oil. Then you’ll mix this around with your hand. Now, unlike Peruvian ceviche which removes the lime juice from the mix we’re going to leave this in. Next we’re going to add the equivalent of ¾ of a cup of chopped cilantro. About 1 cup of mango. ¾ of a cup of chopped white onion. And a little bit more than one cup of tomato which has been diced. And then again, we’re going to mix this around with our hand until it’s completely blended together. We’re going to go ahead and serve this up with some micro-green arugula just for a little bit of an effect. . So I hope you guys loved my video today on how to make yellow fin tuna and mango ceviche.
